Frozen or Fresh…Easy to Bake Dinner for a Weeknight

This is an adapted sheet pan recipe that is easy to make on a weeknight. You can use frozen items or fresh items of produce. It really depends on what is in the freezer during that week and what we have on hand. I prefer turkey sausage for this recipe, but it is also delicious with andouille sausage. Feel free to sub in your favorite veggies to make your own spin on these easy bake sausage, veggies, and rice dish! Step-By-Step Directions

Step 1: Assemble your ingredients.

If you chose frozen veggies, you can warm them in the microwave to half-temperature to make mixing a little easier. I like the fajita peppers, but I have also used tri-colored bell peppers in lieu of onions. It is just as good. Sometimes if I am feeding more than just us, I will double the sausage. I like to use a baking tray instead of a sheet pan for this because the ingredients can get pretty deep. If you prefer things a little crispier, use a sheet pan!

Step 2: Spray your baking tray with cooking spray. Preheat the oven to 400.

Step 3: Chop your turkey sausage. Chop your potatoes. Add veggies.

I have also used baby gold potatoes in this and it works just as well! I like to cut the potatoes pretty small so that they cook all the way through in the time given in the oven. The larger the chunks the longer the cooking time. When you are done with the sausage and potatoes, add in your veggies. I like to cook frozen veggies to half-temperature (half the time) in the microwave so everything is easier to mix together when I am adding seasonings.

Step 4: Seasonings, please.

Once all of the ingredients are chopped and in the tray, drizzle the mixture with a light coating of olive oil. Then, add your seasonings.

  • Parsley flakes

  • Paprika

  • Seasoning salt/pepper

  • Garlic powder/minced garlic

  • Onion powder/minced onion

Step 5: Mix everything together. Cook for 45 minutes at 400.

An optional step would be to add a light topping of parsley over the mixture. You don’t need to stir during cooking, but feel free to turn the mixture if you are worried about the potatoes getting done all the way through. A good hint that the potatoes are done is if they stick a little bit at the bottom of the tray when you try to turn the mixture over in the tray.

Step 6: Cook your rice.

At the 30 minute mark during cooking, start your rice. I like the boil-in-a-bag kind because it is mess-free. You can use white or brown rice.

Step 7: Serve the mixture over rice.

You can also eat this mixture alone without the rice if you are being mindful of carbohydrates. Pardon the picture below of my plate after I got some seconds.
